Dietary constraints

Our gluten free option is a rice flour base dough. Here are the ingredients: water, corn starch, rice flour, potato starch, inulin (natural plant-based fiber), psyllium powder, dextrose, fructose, modified cellulose, extra virgin olive oil, yeast, brown cane sugar, and salt. However, we cannot provide an absolute guarantee. When it comes to baking, all pizzas are cooked in the same oven. Our oven reaches 900 degrees which significantly reduces any risk of contamination. Furthermore, we do not use a baking sheet; the pizzas are placed directly on the oven's stone. If you have dietary restrictions, kindly inform your server, who will communicate your requirements to our kitchen team and advise you on suitable options.

Yes, they are. On the other hand, the fact that our oven is at 900 degrees eliminates all chances of contamination by the oven. We therefore do not use a plate to cook them. Our pizza makers are trained to clean their work surfaces and ensure there is no cross contamination. On the other hand, we can never guarantee 100%. Talk about it with your server, it’s important!

Our vegan cheese consists of filtered water, organic and filtered coconut oil, organic tapioca starch, kappa carrageenan (a natural vegetable gelling agent derived from red algae), and less than 2% of: salt, lemon juice, pea protein, organic potato starch, nutritional yeast, and onion powder.

Certainly, you can modify the ingredients on your pizza to suit your preferences. Please be aware, however, that additional charges may apply. For instance, substituting sausage with salami may result in an extra fee. Altering a recipe requires extra time, and the value of one ingredient may not always equate to the value of another. It is important for us to maintain our philosophy and continue offering pizzas that adhere to the artistry of Neapolitan tradition. If you wish to make alterations to your pizza, feel free to consult our friendly waitstaff, who will be more than happy to assist you.

We do not include peanuts in our recipes. Nevertheless, we work with other nuts and potentially allergenic ingredients across all our pizzerias. In most cases, we can accommodate and modify our pizzas to ensure your safety while enjoying our dishes. However, we cannot guarantee 100% allergen-free preparation. When placing your order, it is crucial to inform our team about your allergies or dietary restrictions, and they will convey this information to our Pizzaioli.

Absolutely! We offer nearly all of our delicious pizzas with a rice flour crust. Our pizza makers are trained to clean all work surfaces meticulously to prevent cross-contamination. Homemade pizza kits

Our pizza kits are designed to be enjoyed on the same day or the following day. However, if someone in your group cancels your pizza party or you want to extend your enjoyment and keep the dough longer, you can refrigerate it for up to 24 hours. If you don't plan to use all the dough within a few hours or the next day, you can freeze it and store it for several weeks.

We have created a page on our website with comprehensive instructions. It's as if you were working in our kitchens.

Yes, it's possible! We offer a dough made from rice flour. We strongly recommend calling your pizzeria before placing an order to confirm the availability of gluten-free dough at your location. Additional charges will apply for rice flour dough.

You can bake it on a baking sheet with parchment paper. It's as simple as that! Even Mirko's expertise is not required for this method. For more information, please visit our pizza kit instruction page.

Let's be honest; it takes a bit of practice to stretch out pizza dough properly! Fortunately, there are four pieces of dough in our kit. We've provided some tips here, and you can even watch a video featuring Mirko D'Agata, our executive chef, demonstrating the technique. You can watch the video here. Watch the video

Recipes and Ingredients

Our pizzas measure 10 inches in diameter, and we recommend one pizza per person. However, feel free to order multiple pizzas and share; some are heartier than others. For example, the Margherita and Marinara are lighter options suitable for those with smaller appetites, while our pizzas with sausage, organic Charlevoix meats, grilled vegetables, or smoked meat are more generously topped. We offer something to satisfy everyone's preferences.

Our pizzas are baked in genuine Neapolitan brick pizza ovens.

It remains a secret between you and our pizzaioli, but our pizza dough is 63% hydrated
