Mozzarella di bufala & yellow tomato coulis

Ingredients
1 can of yellow tomatoes (400 g)
¾ cup (150 g) fine sugar
½ cup (120 g) ricotta
4 balls of Mozzarella di bufala (50 g each)
¼ cup (40 g) crushed almonds, toasted
⅓ cup (50 g) Tropea onions, thinly sliced
Flower of salt
Freshly ground black pepper
Olive oil
10-12 fresh basil leaves
Fresh bread to accompany
Preparation
Prepare the yellow tomato coulis:
In a saucepan, mix the canned yellow tomatoes with the sugar.
Bring to a boil, then reduce to low heat and simmer for about 30 minutes, until it has the consistency of a coulis. Stir regularly to prevent the mixture from sticking.
Assemble the entries:
Spread 3 tablespoons of yellow tomato coulis in the bottom of each bowl.
Add 4 small quenelles of ricotta on the coulis.
Place a slightly split ball of mozzarella di bufala in the center of each bowl.
Garnish and finish:
Sprinkle with crushed and toasted almonds.
Add the chopped onions, a drizzle of olive oil and a pinch of black pepper.
Finish with 2-3 fresh basil leaves and a pinch of fleur de sel.
Serve :
Serve with fresh bread to enjoy.
