Montreal's culinary scene is once again in the spotlight as two of its talented chefs, Mirko D'Agata and Fiodar Huminski, took home the bronze medal at the prestigious World Pizza Championship held in Parma this year.
The event, known as the Pizza World Championship, is the annual pinnacle of pizza art, attracting the best pizza artisans from around the world to compete in a range of categories. This year, more than 1,000 participants from all corners of the globe vied for the coveted title of Pizza Master.
Their unique creation in the "Pizza Due" category captivated the judges and earned them third place.
The inspiration behind this unique creation
The winning pizza, a collaboration between Morso and No.900, embodies a bold fusion of techniques and flavours. The dough, made in Morso’s Roman style, was double-baked, combining steaming and baking. The result is a remarkably airy dough, with a soft texture on the inside and a crispy texture on the outside.
The use of thick corn flour to stretch the dough adds a distinctive dimension of flavor. The combination of salmoriglio and pecorino with the artichokes creates a perfect balance. Inspired by the idea of incorporating artichokes into their pizza, the two chefs developed the idea of topping the pizza with three varieties of artichokes, each prepared using a different technique: pureed, grilled and fried, offering a range of complex textures that delight the taste buds.
The innovative idea of steamed pizza emerged from the inspiration of Mirko D'Agata, who confided that he literally dreamed of this creation. The decision to apply the steam cooking technique to pizza was the result of a valuable learning. Mirko D'Agata shared that this method was taught to him in Italy by his mentor Gianfranco Fagnola, a baking expert. With this acquired knowledge, Mirko D'Agata adapted this technique to the art of pizza, creating a unique and innovative taste experience.
This victory is a testament to the exceptional dedication and talent of Mirko D'Agata and Fiodar Huminski, who have pushed the boundaries of culinary creativity to create a pizza that truly stands out on the international stage.
The winning pizza available in all NO.900 pizzerias
For all pizza lovers, this winning creation will be available starting April 29 for a limited time in all No.900 locations. Although the recipe is slightly modified, you will still be able to enjoy the essence of the award-winning pizza. Indeed, although a few adjustments have been made, the pizza will remain similar, still offering different approaches to the artichoke, both in cream and grilled, as well as crispy speck from Viandes bio de Charlevoix, to fill your taste buds with authentic and refined flavors.
